The key turns all the way round but the bolt stays put. What is wrong?

On a cylinder mortise lock this points to the cylinder rather than the case. The set screw that holds the cylinder in the door has loosened or stripped so the whole cylinder rotates, or the cam on the back of the cylinder has worn or is the wrong shape and no longer catches the bolt lever. Both are fixed by resetting or replacing the cylinder and its set screw, and the case itself is usually fine.

What information helps before you come out?

Whether the door takes a skeleton-style bit key or a flat key in a round cylinder, roughly when the house was built, what the knob and bolt are doing, and whether the trouble is worse with the door closed. A photo of the faceplate in the door edge and one of the keyhole side is worth a great deal. Mention how many doors are involved and how many keys you would like afterwards.

Which parts usually need replacing?

Springs, first and foremost: the latch spring, the hub spring that returns the knob, and the small springs on the deadbolt levers. After that, the spindle and knob set screws, a hub whose square has worn round, a worn deadbolt lever or follower, and on later locks the cylinder set screw or the cylinder itself. Bolts, cases and trim are almost always kept, cleaned and refitted rather than replaced.
